Instructions
Step 1
Preheat oven to 180 degrees. Pat the beetroot dry
Step 2
In a 2ltr dish, put beetroot, lentils, horseradish, garlic and half the parsley.
Step 3
Pour over half the lemon juice and half the olive oil. Season and mix well. Put in oven for 15 minutes
Step 4
Top with cod and leftover ingredients
Step 5
Bake for another 10-12 minutes
