Preparation
Step 1
Roast peanuts in pan or oven, crush in mortar; set aside
Step 2
Dissolve palm sugar in small amount of water by heating until brown and viscous; set aside
Mixing
Step 3
Turn stove to medium/high heat, add oil to pot
Step 4
Add curry pastes, fry and stir for a while
Step 5
Add coconut milk, mix and bring to boil
Step 6
Add sugar, tamarind, soy sauce, fish sauce & crushed peanuts
Step 7
Lightly boil for 15 minutes
Serving
Step 8
Serve, e.g., gai satay
