Instructions

Step 1
Preheat the slow cooker if necessary - see manufacturer's instructions.
Step 2
Remove the skin from the chicken thighs, slash each thigh two or three times and rub with the jerk marinade
Step 3
Heat tablespoon oil in a large frying pan add the chicken and fry over a high heat antil browned on both sides.
Step 4
Lift out and transfer to a plate
Step 5
Add the remaining oil, the onions and garlic, reduce the heat and fry for 5 minutes or until softened and lightly browned.
Step 6
Pour in the coconut milk and stock, season with salt and pepper and bring the mixture to the boil.
Step 7
Transfer half the mixture to the slow cooker
Step 8
Add half the chicken then add all the kidney beans
Step 9
and then the remaining chicken, onions and coconut mixture.
Step 10
Cover and cook on low for 6-8 hours or until the chicken is tender.
Step 11
Stir in the rice, replace the lid and cook on high for 45 minutes.
Step 12
Add the frozen peas (no need to defrost) and cook for 15 minutes more.
