Ingredients
6 servings
2 poundschicken breast
16 ouncesricotta cheese
15-16 ounces whole milk ricotta-
1 cupspinach
chopped
1 cupMozzarella cheese
shredded, divided use
½ cupparmesan cheese
grated, divided use
2 cupsmarinara sauce
I used spicy Arrabiata sauce
4garlic cloves
minced, divided use
1 teaspoonitalian seasoning
salt
cracked black pepper
to taste
Instructions
Step 1
Preheat oven to 400°F.
Step 2
Mix Mozzarella and Parmesan together in a medium bowl.
Step 3
In a bowl, mix together the ricotta, cheese, spinach, half the garlic, and Italian seasoning until combined.
Step 4
Oil a 13x9-inch baking dish with olive oil or spray with no stick cooking spray.
Step 5
Add the chicken breasts in a single layer to the pan.
Step 6
Season with salt, pepper, and remaining garlic.
Step 7
Spread the ricotta and spinach mixture over the top of the chicken breasts in an even layer.
Step 8
Cover completely with the marinara.
Step 9
Bake for about 20 minutes or until the thickest section of the chicken reaches an internal temperature of 160°F.
Step 10
Remove from oven, add the remaining cheese mixture and place back in the oven until the cheese is melted.
Step 11
Remove from oven and allow chicken to rest about 5 to 10 minutes before serving.
