For the Dressing

½ cuplime juice
freshly squeezed

2 tablespoonstahini

1 teaspoonhoney

¼ teaspoonminced garlic

¼ cupolive oil
For the salad
Instructions
To make the dressing
Step 1
In a small bowl, whisk together the lime juice, tahini, honey, and garlic.
Step 2
Whisk in the olive oil until the dressing is blended, and set aside.
To make the salad
Step 3
In a large bowl, toss together the arugula, spinach, snap peas, asparagus, and scallion until mixed. Add three-quarters of the dressing, and toss to coat the ingredients.
Step 4
Arrange the salad on 4 plates, and top evenly with the cooked chicken.
Step 5
Drizzle the remaining dressing evenly over the salads, and serve.
