10 lbsPotatoes
boiled

2 lbsred onions
chopped finely

1 lbsgreen peas
fresh

3 lbsbutternut squash
roasted and mashed

8 pcsgarlic
peeled

2 "fresh ginger root

Instructions
Step 1
mix all the ingredients except water in mixing bowl. Add water gradually to make a dough in soft consistency
for filling
Step 2
1. peel and boil the potatoes in salt water and add 2/3 pcs garlic with it.

Step 3
2. peel and roast your squash in oven at 375C for 50 min. Until its nice and soft.

Step 4
3. In a large cooking pot, add oil, bay leaves, dried red chilies, star anise, mustard seeds. Once the spices start crackling add ginger garlic paste and chopped chilies.
Step 5
add the chopped red onions. after sauteing onion for about 5-10 mins, add all your dried spices. And saute it for another 10 mins.
Step 6
once the potatoes are boiled and butternut squash is cooked mashed both together really fine.
Step 7
Add your sautéed onions to the mashed potatoes and butternut squash mix.

Add the fresh green peas, salt and lemon juice
Step 9
let the mix cool off for couple hours.
To make Samosa
Step 10
take 35g of dough, roll out in round shape tortilla.
Step 11
cur the tortilla in half. Take some water and and apply on half edge of tortilla where its straight.
Step 12
fold that side over dry side and make a cone.
Step 13
with spoon fill about 70g worth filling and apply some water on the round edge to close and seal the top of samosa.
Step 14
fry the samosa in hot canola oil for about 5-8 minutes until golden brown and serve it hot. With Green coriander and chilly mint chutney.
