Instructions

Step 1
In a bowl large bowl add all the spices, garlic, and half the diced coriander and mix thoroughly
Step 2
Thinly slice the medium onion, fresh chilli and tomatoes and add into the spice mix
Step 3
Add the mixed beef into the mix and using clean washed hands mix thoroughly to ensure an even coating. Set aside for 15 mins to marinate while you follow the next steps

Peel and chop your potatoes into nice even sizes, into thirds usually works well for medium sized potatoes
Step 5
Part boil the potatoes, add one teaspoon of baking powder, 2 teaspoons of curry powder and 1 teaspoon of salt into the water. Baking soda breaks down the pectin in potatoes and draws the starch to the surface, this helps the potatoes absorb the salt and curry powder in the water (this tip also helps make extra crispy roast potatoes!)
Step 6
Drain and cool the potatoes. Once cool add to the marinated beef and stir through
Step 7
Heat a large high sided pan over a medium heat with a splash of oil
Step 8
Add the marinaded mix and cook off for 3-5 mins approx to seal the meat and release the aromatic flavours
Step 9
Add your coconut milk and cook together for a further 1 minute
Step 10
Transfer into you slow cooker and cook on low for 4.5 hours approx
Step 11
Served with cooked rice, and enjoy!
