Bruschetta Chicken with a Mozzarella Crust, Bacon Mashed Potatoes, and Broccoli

Instructions

Step 1
Start water boiling for potatoes. Preheat oven to 425°F. Dice potatoes. Combine 1 T melted butter, mozzarella, Italian seasoning, panko, salt, and pepper.
Step 2
Lightly oil a baking sheet. Season chicken with mozzarella crust. Place chicken on one half of a baking sheet.
Step 3
Boil potatoes in salt water for 10-15 mins. Reserve 1/2 cup potato water; drain. Cook bacon.
Step 4
Toss broccoli on other side of baking sheet with olive oil, salt, and pepper. Roast on top rack until chicken is cooked through, 15-20 mins.
Step 5
Finely chop tomato. Quarter lemon. Combine tomato, parsley, chives, a big squeeze of lemon, drizzle of olive oil, salt, and pepper.
Step 6
Mash potatoes with 2 T and half cup of milk. Add bacon. Drizzle lemon mixture on all.
