Instructions
Step 1
Heat olive oil in a large stock pot on medium-high heat.
Step 2
Add onion, carrot, celery and garlic , stirring to coat.
Step 3
Cook until translucent, stirring occasionally
Step 4
Add white beans and rosemary, coating with vegetables.
Step 5
Deglaze with white wine
Step 6
Add stock and bring to a boil.
Step 7
Reduce heat to medium-low and let soup cook 30-45 minutes
Step 8
Add cooked, drained spinach for last 10 minutes of cooking.
Step 9
Before serving, remove half of soup to heat proof container and puree with immersion blender. Return to pot and adjust seasoning
Step 10
Serve with grated parmesan, drizzle of good olive oil and piece of crusty bread
