Cauliflower fried rice

I grated a head of cauliflower and chopped up about a quarter of a head of cabbage. Also grated about six baby carrots because that’s what I had on hand. I can make a batch of this and add chicken or shrimp depending on the mood. Can add a scrambled egg if you wish.

Instructions

Step 1
Grate/rice cauliflower, chop cabbage, and shred carrots. Add oil to nonstick pan over medium heat and add minced garlic. Add veggies and sautée until they begin to cook down. Add soy sauce and teriyaki sauce. Add salt, pepper, and ginger. When everything is well-mixed and blended, you can add a scrambled egg or two or you cooked meat of choice. I’ve chopped asparagus to throw in or even edamame. Makes at least 5 one-cup servings. (More or less depending on the size of your cauliflower and cabbage)
