Ube Cream Filling
2 x 8 ozwhipped cream cheese
2 cupspowdered sugar

4eggs
1 cupmilk
½ cupvanilla coffee creamer
1 tablespoonscinnamon sugar
1 teaspoonvanilla extract
Brioche Bread
sliced thick
fresh strawberries
fresh blackberries

Instructions
Directions to Make Ube Cream Filling
Step 1
In a medium bowl, add whipped cream cheese and powdered sugar. Mix until well combined.
Step 2
Add vanilla extract and ube flavor and mix until well combined.
For the French Toast
Step 3
1. In a large bowl, add eggs, milk, coffee creamer, cinnamon sugar, and vanilla extract. Whisk until well combined.

2. Dip sliced brioche bread into custard and allow the bread to soak up a fair amount of custard.
Step 5
3. In a skillet over medium high heat, add butter and then French toast to the skillet.

4. Fry on both sides until golden brown. Set aside.

5. Make a deep slit into the top of the French toast and then pipe ube cream cheese inside and on top of the French toast.

6. Top with fresh berries and ube syrup.
For the Homemade Ube Syrup
Step 9
Mix white sugar, brown sugar, and water in a medium saucepan. Add cornstarch slurry if you want a thicker consistency for the syrup. Bring to a boil and simmer for about 5 minutes. Do not stir at this time. Remove from heat.
