Paratha is one of the staple foods of Punjabi cuisine and Punjabis cannot do without it. Ideally considered as part of the breakfast, parathas are something that Punjabis can have all day and not get tired of eating. The reason why parathas are enjoyed as breakfast is, they were earlier made with ghee and enjoyed with a glass full of chaach or lassi, giving energy to the men of the house for working all day in the fields. Parathas are generally stuffed and you can use any vegetable for stuffing per se and there is no dearth of vegetables for making a paratha. Here is the recipe for one of the popular parathas - Aloo Paratha, in which the main ingredient is aloo or potato. It is a simple and easy-to-make paratha recipe that can be made in the time frame of half an hour. Punjabi mothers love feeding their kids and make paratha with lots of ghee, which is further enjoyed with white butter (known as safed makkhan) or thick curd. These days, people also love to have aloo paratha with pickle of different kinds and dal/sabji. This stuffed flatbread is also popular outside India as well and is made using different spices. It is one of the basic parathas that you can easily cook at home when nothing strikes you. All you need to prepare this easy recipe is: Wheat flour, boiled potatoes, green chillies, coriander leaves, red chilli powder, black pepper and asafoetida along with a little carom seeds, and last but not the least garam masala powder, which is the soul of Punjabi cuisine. This recipe used both carom seeds and asafoetida, as potatoes are highly gastric and can put a bad effect on your stomach. In order to soothe the stomach, we have used both these ingredients, however, you can choose any one of them. Also, some people use finely chopped onions in the recipe for a little crunchiness and to increase the flavour of these parathas. The key to making flawless, tastier and soft Aloo Paratha is to mash the potatoes well using a masher or you can also grate the potatoes for giving a fine touch to mashed potatoes.
