1 ½ cupswater

1 pinchturmeric powder
ground turmeric

2 tablespoonsoil
neutral flavored, or unsalted butter or ghee, clarified butter

½ teaspoonmustard seeds black

1 teaspooncumin seeds

⅓ cuponions
finely chopped

1 teaspoonsGinger Garlic Paste
or 1 inch ginger & 3 to 4 medium garlic cloves crushed in a mortar-pestle

2green chilies
slit or chopped

2dry red chilies
kept whole or halved and deseeded, optional

10curry leaves

1 pinchesasafoetida powder
hing, for a strong asafoetida, just one pinch is enough

½ teaspoonturmeric powder
ground turmeric

red chili powder
or cayenne pepper or smoked paprika

⅓ cuptomatoes
finely chopped, or 1 medium-sized

or add as required

kasuri methi
