Instructions
Step 1
Preheat your oven to 350 and prepare a cookie sheet with parchment paper or a silicone baking mat. Roasting the almonds pre-processing makes the processing so much easier. Warm nuts are easier to grind because of the additional heat. If you prefer not to roast them, you can simply skip this step but may need to process the nuts a few minutes longer.
Step 2
Mix the maple syrup or honey, vanilla, salt, cinnamon and melted coconut oil together in a medium sized mixing bowl until all ingredients are dissolved.
Step 3
Add in the almonds and combine until fully coated.
Step 4
Spread the almonds onto your prepared pan and bake for 15 minutes stirring almonds in the pan halfway. Allow almonds to cool for 5 minutes.
Step 5
Toss cooled almonds into your food processor or high powered blender and start blending for 5 minutes. Scrape down the edges and continue processing for 10 minutes straight.
Step 6
Scrape down the edges once more and if the almond butter isn’t smooth yet continue to process for an additional 5 minutes.
Step 7
Once the almond butter is smooth, taste to test the sweet and saltiness and add more salt, sweetener or oil and you wish.
Step 8
Pour into an airtight jar or container and store at room temperature for 2 weeks or in the fridge for a month. Enjoy!
