Spicy honey chicken

Instructions

Step 1
1) Season both sides of the chicken with salt and pepper (not too much salt) and sear in one tablespoon of the oil over medium high heat until it develops some color on both sides, then remove to a plate. 2) Add the remaining tablespoon of oil then add the onions, cook for a few minutes, then add the ginger and garlic and cook one more minute, stir in the chili paste for the last 30 seconds. 3) In a small measuring cup, whisk together the chicken stock, honey, vinegar and soy sauce, pour in the skillet, add the chicken back in, then cook on medium heat for about 10 minutes or until the sauce thickens and chicken is fully cooked through. Serve with some rice and steamed veggies for a delicious weeknight dinner!
