Mango Salad
Step 1
Slice cucumber into rounds.
Roughly dice the red capsicum.
Dice the avocado and mango into chunks around 2cm in size.
Finley Dice the onion and jalapenos.
Strip the leaves from the coriander stems and roughly dice the leaves. Discard the stems. Combine the above in a large bowl.

Step 2
Drizzle the sweet chili sauce, and squeeze the lime over the salad. Mix the salad to coat everything in the lime juice and sauce and then set aside.

Step 3
Finely chop the garlic and place in a medium bowl.
Grind the black pepper in a mortar and pestle and place in the bowl, then add the paprika and mix.

Step 4
Slice the fish fillets into 8 equal sizes.
Take each fish fillet and lay it in the bowl of spices to coat each side of the fillet.

Step 5
Place a frying pan on medium heat and add the oil.
Once pan is hot cook the fish fillets for 3-5 minutes each side.
