Instructions
Step 1
Wash and cut your cherry tomatoes in half.
Step 2
Place your cherry tomatoes on a tray previously lined with parchment paper, season with salt, pepper, sugar and a drizzle of extra virgin olive oil.
Step 3
Bake for 10 mins (200C/390F).
Step 4
In a blender, add your cooked cherry tomatoes, ricotta, fresh basil and a drizzle of extra virgin olive and mix for a minute or until creamy.
Step 5
In the meantime, boil your pasta in some salted water for the time indicated on the package and drain.
Step 6
Add your pasta in a bowl along with your sauce and mix everything together.
Step 7
Serves with some cherry tomatoes on top and a nice leaf of fresh basil. Buon appetito!
