Merguez- Spicy Algerian Sausages

These are a staple in Algeria and such a delicious spicy sausage. You can find lamb casing online to order. I tried making these with vegetarian casing, as the idea of lamb intestines is something that doesn’t sit well with me personally, but unfortunately it did not fill easily and was cooking weird. Nonetheless, using the lamb casing holds the meat well and does not impart any lamb-like gamey flavor to the sausage! It is neutral in smell and taste and just does such an amazing job at holding together this masterpiece of a stuffing.

or ground lamb shoulder

1 ½ tspcayenne pepper
adjust to taste

1 tspturmeric

of choice, preferably a baguette

Instructions
Step 1
1. Prepare the lamb casing as mentioned in the instructions if you are purchasing them from online (I order it from Amazon and you just have to soak them in water to regain moisture). Otherwise if you are sourcing them from a local butcher, they should be washed and ready to use.

2. In a mixing bowl, combine the ground lamb or beef, blended onion, crushed garlic, salt, cumin, paprika, garlic powder, cayenne pepper, ginger, turmeric, black pepper, ground fennel, coriander, and onion powder. Mix well. Adjust the consistency with olive oil or bread crumbs if needed.

3. Place the casing on the smaller-sized sausage stuffer, and tie a small knot at the end.

4. Stuff the casing with the meat mixture, twisting and tying knots at desired intervals to form sausages.
Step 5
5. In a frying pan, cook the sausages over medium heat. Poke a few holes in each sausage to release any air gaps. No additional oil is needed as the sausages will naturally release oils.

6. Fry the sausages, flipping them until a golden-brown crust form on all sides.

7. Heat the baguette or bread of your choice.

8. Assemble the sandwich by spreading harissa on the bread, adding fries, and placing the cooked sausages inside.

9. Serve and enjoy the delicious sandwich!
