Instructions

Step 1
Cook pumpkin (skin on)
Step 2
Pulse cooked pumpkin in a food processor, Blender, or mash by hand.
Step 3
Mix dry ingredients in one bowl.
Step 4
Mix pumpkin and wet ingredients in another bowl.
Step 5
Combine pumpkin mixture with dry mixture.
Step 6
Do not over stir.
Step 7
Heat waffle iron.
Step 8
Oil, or butter waffle iron. Use spoon to add Mix to waffle iron.
Step 9
Cook to desired texture.
Step 10
Enjoy
