A super easy vegan recipe that’s a slightly healthier version of the regular sausage roll 🤌 When I was a kid I loved sausage rolls too much, these veggie ones are packed with so much hidden veg and heaps of flavour from the herbs and spices. Instructions

Step 1
Preheat oven to 180C
Step 2
Add all the veggies, herbs, spices, salt, pepper and tomato paste to a food processor and pulse 4 - 6 times
Step 3
Add the lentils and flax egg and pulse another 3 - 4 times
Step 4
Have a lil taste test and stir through extra seasoning if needed
Step 5
Transfer the mixture into a piping bag and cut the opening 1 inch wide then pipe the mixture slightly closer to one side of the pastry as seen in the video
Step 6
Brush some soy milk onto the smaller side of the pastry then fold the large side of pastry over to the smaller side, try and tuck it in a little and then seal shut using the back of a fork (watch some tutorials on YouTube if it doesn’t make sense haha)
Step 7
Cut them into 1/4s (or any size you like), brush with more soy milk and then sprinkle over the sesame
Step 8
Bake for 20 - 25 minutes or until golden and crispy, serve with tomato sauce and enjoy!
