Ingredients

2 Tbspsunflower oil
2onions
4boneless skinless chicken thighs
3garlic cloves
1 Tbsporegano
1 tspcumin seeds
1 tspchipotle paste
350gpassata
0.5chicken stock
400gcan black beans
drained, but not rinsed
0.5lime
juiced
To serve
Instructions
Step 1
Heat oil in a shallow saucepan or casserole dish with a lid
Step 2
Tip in onions and cook over medium-low heat for 5 mins until softened
Step 3
Add chicken and turn up the heat to medium
Step 4
Stir in garlic, small pinch of sugar, oregano, cumin seeds and some seasoning
Step 5
Cook for a couple minutes, then add the chipotle and cook for a few more
Step 6
Pour in passata, 100ml water and stock
Step 7
Season and bring to a simmer
Step 8
Cover with lid and cook for 40-50 mins, stirring occasionally until the chicken is tender
Step 9
Shred chicken into the sauce using two forks, then stir through the beans
Step 10
Simmer for 5 mins more, then turn off the heat
Step 11
Squeeze in lime juice
Step 12
Serve
