Easy Rhubarb Scones
These delicious scones are my favorite way to use rhubarb. Everybody loves them! ☀️

Ingredients
8 servings
180gfresh rhubarb
1 Tbspsugar
250gflour
1 ½ tspbaking powder
1 tspbaking soda
½ tspsalt
⅓ cupbrown sugar
or other sweetener
80gvegan butter
¼ cupplant milk
¼ cupapplesauce
2 tspvanilla extract

Instructions
Step 1
Cut the rhubarb into chunks and mix with 1 tbsp sugar. Set aside.
Step 2
In a bowl, combine the dry ingredients. Using the large side of a box grater, grate the cold butter into the dry ingredients. Use your fingers to roughly rub the butter into the flour. Add the rhubarb and toss to combine, then add the wet ingredients and mix until just combined. Do not overmix.
Step 3
On a floured surface, flatten the dough into a circle and press down slightly.
Step 4
Divide into 8 pieces like a pizza, then place the scones on a baking sheet lined with parchment paper. Brush with plant milk, maple syrup and oil.
Step 5
Bake in the preheated oven at 200°C for 16-22 minutes.
