450gtofu
cubed

¼ cupcornstarch

3 tablespoonvegan butter
or oil

1onion
minced

3 tablesppontomato paste

2 tablespoonnutritional yeast

1 tablespoonmaple syrup

2cloves garlic
minced

1 tspcurry powder

1 tsprice vinegar

½ tspred pepper flakes

0.5 teasponmustard seeds

¼ tspturmeric

1 cupfrozen peas

1can coconut milk

salt
to taste

Instructions
Step 1
Mix tofu and cornstarch
Step 2
heat butter in a skillet over medium-high and add half the tofu until brown and crispy
Step 3
remove, and fry the remaining tofu
Step 4
remove the tofu, and add the onions
Step 5
add tomato paste, nutritional yeast, maple syrup, garlic, curry powder, rice vinegar, red-peper flakes, mustard seeds, turmeric
Step 6
add the coconut milk and bring to a boil
Step 7
add the frozen peas and tofu
Step 8
bring to a simmer, add salt & pepper, garnish with microgreens
