Roasted Gnocchi with Meatballs, Peppers & Sage

Gnocchi is one of my favourite things to make for me and the kids now. It's so simple and really quick, and you can easily find it in most supermarkets. I use sausages to make the meatballs in this recipe because they really give the dish so much flavour and taste amazing with the sage.

Instructions
Step 1
Preheat the oven to 200 degrees C/200 degrees C fan.
Step 2
Take heaped teaspoonfuls of the sausagemeat and roll into small meatballs. Toss the meatballs with the oil on a large rimmed baking tray or in a roasting tin. Bake for 10 minutes so they start to brown slightly.
Step 3
Remove the tray from the oven and flip the meatballs over. Add the tinned tomatoes, peppers, balsamic vinegar and dried oregano to the tray. Sprinkle on the salt and pepper, then stir everything together. Gently shake the tray a few times to spread everything out evenly. Return to the oven for 25 minutes, stirring halfway through, until the sauce is thickened.
Step 4
Remove the tray from the oven. Toss the gnocchi with the sage leaves and a drizzle of oil, then spread out over the tray. Return to the oven to bake for another 5 minutes to warm the gnocchi through.
Step 5
Turn the oven to the grill setting and grill for 2-3 minutes until the meatballs and gnocchi are slightly browned on top.
Step 6
Remove from the oven and sprinkle with some grated Parmesan before serving.
Variation
Step 7
Use veggie sausages in place of the pork sausages. These often don't have casings, so you can just chop them into small pieces and roll into balls.
