Instructions
Step 1
Preheat oven to 350°F.
Step 2
Heat a medium skillet over medium heat, then add oil and onion. Cook until translucent, about 4-5 minutes.
Step 3
Add green and red bell peppers and cook,
stirring occasionally for another 4-5 minutes or until tender.
Step 4
Stir in tomatoes and tomato paste. Remove from heat.
Step 5
Add jerk seasoning and ginger to the vegetable mixture and stir well, until tender.
Step 6
Lightly coat a 9x13 baking pan with nonstick vegetable cooking spray.
Step 7
Spread the white beans in an even layer on the bottom of the pan.
Step 8
Pour the pepper and tomato mixture over the beans, spreading evenly.
Step 9
Sprinkle cheese over top.
Step 10
Bake for 15 minutes. Serve on a bed of spinach.
