Preheat oven to 200 degrees Celsius and line a tray with baking paper.
Wash, deseed and chop pumpkin into large chunks. I like to leave the skin on for extra nutrients and fibre, but this is optional!
Place pumpkin on a baking tray with whole, unpeeled garlic cloves and sprinkle with cumin and herbs. Bake for 30 minutes or until soft and caramelised.
Once cooked, remove garlic from the peel and add into a blender together with pumpkin, turmeric and 4 cups of water or low-sodium veggie stock. Blend until smooth, adding more water if needed to bring to your desired consistency.
If needed, reheat in a pot. Then serve topped with black pepper and fresh rocket.
