Instructions
Step 1
Wash and thinly slice 4-5 medium potatoes.
Step 2
Heat up 2 tablespoons of olive oil and add onions
Step 3
Let the onions get golden brown, then add the potatoes along with all the seasoning on medium heat covered with lid for 7-8 minutes.
Step 4
Remove lid and a splash of water and stir lightly and add in the spinach and cover.
Step 5
Let cook for another 9-10 minutes unitl potatoes and nice and soft.
Step 6
Make holes in the middle and crack in 4 eggs and let cook.
Step 7
Garnish with cilantro and enjoy with while rice or roti.
