Simple Salmon & Detoxing Greens

The words “detox” and “cleanse” get thrown around a lot, but what does it actually mean?
In my eyes, food that is described in this way has to have a few properties…
First it has to be liver supporting (this is really what detoxing means); it’s not necessarily the food that detoxes you, rather it is food that supports the liver, the organ responsible for body detoxification.
The second is that it must be simple, with few ingredients. Whenever my gut and digestion is feeling a little off, I opt for really simple food - no fancy ingredients or sauces, just basic vegetables, animal proteins, lemon, salt, pepper and olive oil. The third is that it must contain powerful plant compounds (antioxidants, phytochemicals, polyphenols, minerals) in the form of fresh organic vegetables and herbs. Basic vegetables and herbs are so powerful, they are the most super of any superfood you’ll ever need. And it explains the addition of pesto to this recipe, you get a huge bunch of fresh herbs in one spoonful.

Instructions
Step 1
Season salmon with salt and pepper.
Step 2
Heat a pan over medium to high heat and add in 1 tsp of olive oil. When the pan is hot, carefully place the salmon in the pan, skin side down and cook for 6-7 minutes. Flip and cook for another 2-3 minutes, depending on the thickness of the salmon. Set aside.
Step 3
Change the heat to high, and add in another tsp of olive oil . Add the bok choy and kale to the pan and stir fry for 3-4 minutes. Set aside on serving plates.
