Instructions

Step 1
1. Rehydrate tvp with boiling water 2. Chop all vegetables into bite sized pieces 3. Fry olive oil, onion, garlic & ginger until tender before adding the cashews & cooking for a few minutes 4. Add carrots & cook for a few minutes before adding zucchini & mushrooms 5. Season to taste & add chilli powder & rehydrated tvp once vegetables are soft & cook for a few minutes before adding soy sauce & mixing through 6. Serve on top of lettuce leaves
