Instructions
Step 1
Marinate pork: at least 1 hour before cooking season pork tenderloin with salt, pepper and garlic powder. To a large bowl, add 1 Tbsp brown sugar, 2 tbsp of grainy mustard, 2 tbsp of maple syrup, one finely chopped garlic clove and 4 tbsp of olive oil. Immerse the pork tenderloin in the mixture and put in the fridge to marinate

Preheat oven to 450
Step 3
Prep: finely chop one apple. Chop 2 apples into 1/4 inch pieces. Finely chop small red onion. Slice 2 large carrots.
Step 4
Dear pork tenderloin: heat a large oven proof skillet over medium. Sear each side of the tenderloin for 1-2 minutes. Remove from heat.
Step 5
Roast pork and veggies: to the skillet, with the pork, add the larger chopped apples and carrots. Season with salt, pepper and a dash of cinnamon and nutmeg. Add the remaining marinade and toss the veggies. Roast, covers in the oven for 20 minutes.
Step 6
Start the risotto: bring a sauce pan with 3 cups of chicken stock to a boil. Melt two t tbsp of butter in another sauce pan. Add onions and sauté for 3 minutes. Then add the finely chopped apple and 1/2 cup of Arborio rice. Cook for three more minute to lightly toast the rice.
Step 7
Cook risotto: to the saucepan with the rice, add 1/2 cup of dry white wine. Stir until reduced. Add 1/2 cup of the heated chicken stock and stir, letting it be absorbed. Continue to add stock 1/2 cup at a time until it is gone.
Step 8
Finish risotto: add 2 tablespoons of butter, a dash of nutmeg and 1 tbsp of shredded Parmesan cheese
Step 9
Finish pork: remove pork from the oven and let rest for at least 10 minutes.
Step 10
Serve: slice pork for serving and place it over the risotto with the roasted apples and carrots
Step 11
Optional: you can garnish the pork with a warm cinnamon apple sauce
