Instructions
Step 1
Rinse the Quinoa: Rinse the quinoa in cold water to remove any bitterness. Drain it using a fine- mesh sieve.
Step 2
Cook the Quinoa: In a saucepan, add the rinsed quinoa and 2 cups of water. Bring it to a boil.
Step 3
Once it starts boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed. Fluff the quinoa with a fork and set it aside.
Step 4
Sauté the Vegetables: In a separate pan, heat the oil or ghee over medium heat. Add cumin seeds and let them splutter. Then, add finely chopped onions and green chilies. Sauté until the onions turn translucent.
Step 5
Add Mixed Vegetables: Add the mixed vegetables to the pan and cook them until they are tender.
Step 6
Seasoning: Stir in the turmeric powder and salt,mixing it well with the vegetables.
Step 7
Combine Quinoa and Vegetables: Add the cooked quinoa to the pan with the sautéed vegetables.
Step 8
Mix everything together until the quinoa is evenly coated with the vegetables and spices.
Step 9
Garnish: Garnish the quinoa with fresh coriander leaves.
