Lemongrass Chicken Rice Bowl

Fresh, tasty and so bloody mooreish. Beautifully cooked chickeny rice topped with aromatic chicken thighs and salads. You can add any toppings you like. I buy ready made pickles from the Vietnamese supermarket as well as crispy fried shallots! If You don’t have access to these this recipe is still Delicious! Keep in mind that if you don’t have one of more of thee ingredients for the marinade you can just skip it! Just make sure you season is well with sugar salt and pepper!

Instructions

Step 1
To make the marinade combine sugar, salt, MSG, fish sauce, white pepper, jimmys sate, lemongrass, ginger and garlic in a bowl
Step 2
Marinate the chicken in the marinade for at least 10 minutes. While this is marinating I put 1 cup of rice in to a rice cooker with 1 cup of water and chicken powder. Leave to cook.
Step 3
Air fry the chicken at 200 degrees for 15 minutes or bake at 200 degrees for 15-20 minutes
Step 4
While the chicken is cooking fry the eggs sunny side up.
Step 5
Slice the chicken. To assemble the rice bowl, add rice to the bottom of a bowl and top with the egg. Beside the rice, add your chicken then top with the herbs and any other garnished you have on hand. I would recommend peanuts, fried shallots, chilli paste but these are all optional!
