Add raspberries, blackberries, and blueberries - set aside a handful - with gingerbread spice and the cinnamon stick in a small pot. Cover and cook over low heat for 15 minutes, stirring occasionally, until the berries have broken down into a thick sauce. If necessary, add another 2-3 tablespoons of water.

In the meantime, whisk the almond milk with oil, vanilla pulp, and agave syrup in a small bowl.

Preheat the waffle iron. Mix flour and baking soda in a large bowl. Stir in the almond milk mixture, then gently fold in the lentils.

Grease the waffle iron with some oil. In the center of the iron, pour in about 125ml of batter at a time and bake waffles according to the manufacturer's instructions until the batter is used up.
