Chicken taco soup
Chicken taco soup! This is on the mild side to make it more kid friendly but you can add more seasoning and extra veggies if you like! I used the instant pot but you can simmer for 20+ minutes in a heavy pot if you are doing it on the stovetop.

Step 1
Chop onion, mince garlic and sauté in a tbsp of oil in the instant pot on sauté mode until onions are translucent. Meanwhile, chop 2-3 cups of cooked chicken (I used 1 breast from a rotisserie chicken). Add seasoning and tomato paste and cook for a minute then add remaining ingredients. You can use anywhere from 1-2 cups each of black beans and corn, to taste. Pressure cook on high for 4 minutes then natural release 10 minutes or longer. Then mix in 1/4 cup cream cheese. Top with choice of corn Chips, cheese, avocado, cilantro, sour cream.
