Grilled Summer Veg Pasta Salad

Instructions

Step 1
Cook rotini until al dente, according to package directions. Drain and rinse with cold water.
Step 2
Combine onion, pepper and asparagus in a large bowl.
Step 3
Add 2 tbsp olive oil and garlic and season well with salt and pepper. Toss to coat.
Step 4
Grill vegetables on high heat for 4-10 minutes, until tender. Cut vegetables into 1 inch pieces.
Step 5
Combine remaining 1/4 cup olive oil, balsamic and red wine vinegars, mustard and honey in a serving bowl. Add rotini, grilled vegs, tomatoes, parsley and Parmesan and season generously with salt and pepper. Toss until combined.
Step 6
Refrigerate any leftovers.
