Ingredients

¼ cuplow-sodium soy sauce
or gluten-free tamari for gluten-free option

2 tablespoonshoney

1 tablespoonrice vinegar

1clove garlic
minced

1 teaspoonfresh ginger
grated

½ teaspooncornstarch
optional, to thicken the sauce

red pepper flakes

3boneless skinless chicken breasts
cut into bite-sized pieces

2 cupsbroccoli florets

2 tablespoonsvegetable oil
such as canola or grapeseed oil

Instructions
Step 1
Prepare the Teriyaki Sauce:

In a small bowl, whisk together the low-sodium soy sauce, honey (or maple syrup), rice vinegar, minced garlic, grated ginger, cornstarch (if using), and red pepper flakes (if using). Set aside.

Cook the Chicken and Broccoli:

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken pieces and stir-fry for about 5-6 minutes or until they are cooked through and slightly browned. Season with salt and black pepper to taste. Remove the cooked chicken from the skillet and set it aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil.

Add the broccoli florets and stir-fry for about 4-5 minutes until they are tender-crisp.

Combine Chicken, Broccoli, and Sauce:

Return the cooked chicken to the skillet with the broccoli.

Pour the prepared teriyaki sauce over the chicken and broccoli. Stir well to coat everything in the sauce.
