Step 1
Cube your chicken into bite-size pieces. Transfer to a bowl, add the thai curry paste and let it marinate for 30 min or overnight.

Step 2
In a small pot, combine rice, water and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes.
Keep covered off heat until ready to serve.

Step 3
Fry the marinated chicken in some oil in a pan.
Meanwhile, dice onions, zucchini, carrots and bell pepper.

Step 4
Transfer fried chicken to a bowl. Add onions, zucchini, carrots and bell peppers to the pan and fry them till lightly softened.

Add back the chicken and rice to the pan and season with soya sauce.

Plate Nasi Goreng with a fried egg on top and sprinkle from chopped spring onion over it.
