Instructions

Step 1
Cube your chicken into bite-size pieces. Transfer to a bowl, add the thai curry paste and let it marinate for 30 min or overnight.

In a small pot, combine rice, water and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.

Fry the marinated chicken in some oil in a pan. Meanwhile, dice onions, zucchini, carrots and bell pepper.

Step 4
Transfer fried chicken to a bowl. Add onions, zucchini, carrots and bell peppers to the pan and fry them till lightly softened.
Step 5
Add back the chicken and rice to the pan and season with soya sauce.
