Instructions
Step 1
Saute the onion in oil over medium heat until translucent. Add bell pepper and cook until softened, then stir in garlic, jalapeno and ginger and cook a few minutes more.
Step 2
Add tomatoes, spices and beans. Bring to a boil, then simmer until the flavors have mellowed, about 20 minutes.
Step 3
Stir in chopped kale and turn off heat (unless serving immediately). Optionally, serve with a dollop of Greek yogurt.
