Sweetcorn Fritters (Vegetarian)

If you get the urge for something sweet when dieting, rather than reaching for the biscuits or chocolate, try making these fritters first. Filled with sweet ingredients, but no sugar, a serving of two of these fritters have fewer calories than a standard chocolate bar and will be much more filling! By replacing the olive oil with light oil spray the calorie content and energy density can be reduced even further and for a hint of spice or smoke add half a teaspoon of chilli flakes or paprika.

Instructions

Step 1
Thinly chop the spring onion, red pepper and cherry tomatoes and place in a large bowl. Peel and grate the sweet potato and add this to the bowl with the drained sweetcorn, wholemeal flour and a sprinkle of salt and black pepper. Crack in the two eggs and mix well so the flour and egg are totally absorbed. Pour the olive oil into a frying pan over a medium heat and spoon in burger sized amounts of the mixture pressing down with the back of a spoon. Make sure the fritters are spaced apart, which means you will probably get no more than three in a pan. When the underside has firmed and browned flip the fritter over. Lower the heat and cook until the fritter is fully cooked through . Makes six fritters. Suggested servings: Three.
