Instructions

Step 1
01 Cut the beef steak into thin strips. Place it in a bowl. Add 3 tablespoons of cornflour to the beef, and mix it in until each strip is coated.
Step 2
Add a very big glug of vegetable oil to a wok so that it's about 2 cm (¾ inch) deep. Once the oil is hot, throw in your beef. Do this in batches if you have a small wok. You want each strip to be in full contact with the oil to ensure extra crispiness.
Step 3
Once your beef is brown and crispy, remove from the heat and set aside on some paper towels.
Step 4
Time to get your rice on. Add the basmati rice to a pan using the ratio: 1 part rice, 2 parts water until the water has been fully absorbed. This will ensure fluffy,
Step 5
Meanwhile, remove the oil from the wok, then place it back on the heat and add 1 tablespoon of sesame oil. Chuck in sliced red peppers. Allow to soften for 3-4 minutes, and then add a peeled, grated 5-cm (2-inch) piece of ginger, garlic cloves, the squeezed juice of an orange and a sliced red chilli.
Step 6
Cook for 3 more minutes and then add the crispy beef back into the wok. Mix everything together, and then add 3 tablespoons of soy sauce, the zest of ½ orange and 1 heaped tablespoon of runny honey. Mix it in and add a small glass of cornflour slurry (mix a heaped teaspoon of cornflour in a small glass of water until it has dissolved) to the wok.
Step 7
Mix everything together, add chopped spring onions, cook for 1 more minute and then remove from the heat.
Step 8
Serve the beef on top of the basmati rice.
