For the marinade

Instructions
Step 1
Mix all your marinade ingredients in a bowl and then toss in the tofu, pepper and onion. Coat evenly in the marinade and then let sit for between 10 minutes and 1 hour.
Step 2
Heat some oil in a frying pan on medium-low and add the garlic. Sauté for a minute and then add the marinaded vegetables and tofu. Sprinkle over the chilli and salt and then cook for 6-8 minutes, stirring constantly.
Step 3
Heat a tortilla in a large frying pan for 10 seconds on each side and then assemble with the toppings.
