Ingredients

Lemon Vinaigrette:
⅓ cupextra virgin olive oil
4 tablespoonsfresh lemon juice
1 clovegarlic
finely minced or grated
¼ teaspoonsalt
⅛ teaspoonblack pepper
Pasta Salad:
Instructions
Step 1
Vinaigrette:

Combine all ingredients and whisk to combine.

Pasta Salad:
Step 4
Cook tortellini according to package instructions.
Step 5
Once it has drained, drizzle a little olive oil or lemon vinaigrette over the pasta to keep it from sticking.
Step 6
Set aside to cool to room temperature.
Step 7
Once cooled, combine tortellini, corn, tomatoes, zucchini, feta, basil, and dressing. Toss to combine. Season to taste with salt and pepper.
Step 8
Serve immeadly. (For meal prepping: store in the fridge for up to 3 days.)
