Cook grain and drain
Step 2
Finely dice onion, dice capsicum, get corn ready
Step 3
Heat drizzle olive oil in large fry pan on medium high. Cook onion, capsicum and corn for 7 minutes. Add drained black beans along with seasoning. Cook a further 2-3 minutes.
Step 4
Make smoky yoghurt with sriracha and paprika, season with salt and pepper. Chop avocado.
Step 5
Fry some eggs in a pan with lid until whites set and yolk still runny.
Step 6
Add cherry tomatoes to main pan with lime juice and cooked grain and coriander if using. Season with salt and pepper.
Step 7
To serve: divide mixture up, top with eggs and avocado, crumble over feta. Dollop yoghurt.
