Instructions
Step 1
Heat oil in large saucepan pan over medium high heat

Add onion, cook until soft
Step 3
Stir in garlic and cook until fragrant
Step 4
Stir in tomatoes and cook for 1 min
Step 5
Add tumeric, coriander and cumin. Cook until fragrant, stirring constantly
Step 6
Stir in lentils, coconut milk and broth. Bring to a boil.
Step 7
Reduce heat and simmer about 20 min until lentils are cooked
Step 8
Add salt and cayenne, stir for 2 more minutes
