Instructions

Step 1
Lightly fry the bacon and spring onion for 2-3 minutes, stirring occasionally. Add the chopped spinach and allow to just wilt (another 1-2 minutes). Allow to cool slightly.
Step 2
In a mixing bowl, combine the flours, baking powder, herbs, eggs, oil plus a pinch of salt. Stir to combine until a smooth batter forms.
Step 3
Add chopped sun dried tomatoes, roast capsicum strips, crumbled fetta and the cooled bacon mixture and mix through.
Step 4
Pour into lined brownie pan (15 x15cm).
Step 5
Bake in a 160°C oven preheated oven for 30-35 minutes.
Step 6
Serve warm or cold. Can be frozen in portions for an easy breakfast or lunch.
