Meatballs:

500gbeef mince

200gpork mince

2garlic cloves
minced

1red onion
grated

1 cupbreadcrumbs

1egg

¼ cupfresh parsley
finely chopped

6mint leaves
finely chopped

½ tspdried oregano

1 Tbspextra virgin olive oil

salt
to season

Tzatziki:
Instructions
Tzatziki:
Step 1
Wrap the shredded cucumber in a paper towel and squeeze, ridding of excess water.
Step 2
Put into a bowl, adding in the remaining ingredients. Blend until combined.
Meatballs:
Step 3
Put all ingredients for the meatballs into a bowl. Using your hands, mix well for a few minutes until mixture is combined and smooth. For best results, refrigerate for an hour as makes mixture easier to roll and retain shape.
Step 4
Roll heaped tablespoon amounts of the meatball mixture into balls. This should make about 32-35 meatballs depending on how big you want them.
Step 5
Heat oil in a large frying pan over medium-high heat.
Step 6
Cooking in batches, dredge meatballs lightly in flour and shake off excess before placing into the hot pan. Roll them around the pan and cook for 5 minutes or until browned. Remove to a plate and cover to keep warm, repeating with remaining meatballs.
Step 7
Serve on top of a bed of the tzatziki with a pita bread (optional).
Notes:
Step 8
Can substitute other types of meat in place of beef or pork, such as lamb.
Step 9
Instead of frying, you can bake the meatballs by spraying them generously with olive oil then cooking at 180C for 20 minutes or until browned.
