Grandbum's Oatmeal Pancakes
Makes 12 4-inch pancakes, quite enough for about two people.
Consider, as we did in Germany, substituting spelt flour.
MOD: I substituted brown sugar for the white, and it was very good.

Instructions
Step 1
Mix oats and buttermilk. Cover and refrigerate overnight. (Can use 1T lemon juice with 1c milk or almond milk in place of buttermilk.)
Step 2
Beat in the flour, salt, sugar, soda, and eggs. (If you add the soda last, the cakes will be fluffier. Not sure if this is what is desired, though (we have liked them with the soda in the middle).)
Step 3
Cook on griddle or skillet.
