Instructions

Step 1
Cook the (vegetarian) sausage in a skillet until browned. Set aside.
Step 2
In the same skillet, sauté shallot, garlic, Italian seasoning, and cherry tomatoes in olive oil.
Step 3
Add tomato sauce, broth or water, and coconut milk. Bring to a simmer.
Step 4
Stir in uncooked potato gnocchi directly into the sauce and cover for 2 minutes to let the gnocchi cook.
Step 5
Add the cooked sausage back in, season with salt and pepper. Add fresh spinach and let it wilt in the sauce.
Step 6
Optionally garnish with walnuts and chili flakes
