Instructions
Step 1
Boil water in a pan with salt and pasta when it boils
Step 2
Slice up the guanciale and bake. take out when crispy. Cook the minced garlic for 2 minutes until fragant, add the butter and a dash of pasta water to the pan and take it off the heat.
Step 3
Grate up half of both cheeses and add the eggs to this mixture with some black pepper. Finely cut the parsley.
Step 4
When the pasta is al dente, drain it and add it in the pan with the egg cheese mixture, meat, parsley and some pasta water. Keep stirring and combining until the sauce becomes glazy, shiny, silky. Make sure the eggs don't scramble (this happens when the heat is too high).
Step 5
Don't wait and serve fast, so it doesn't keep on cooking in the pan. Serve with some grated cheese on top. Optional: rocket salad.
