Instructions
Step 1
Prep: Wash and slice the bell pepper and onion. Rinse and drain the black beans.
Step 2
Cook the vegetables: Heat olive oil in a large skillet or griddle over medium heat. Add the sliced bell pepper and onion and cook, stirring occasionally, until softened and slightly browned, about 5 minutes.
Step 3
Add black beans and corn: Stir in the black beans and frozen corn. Heat through, about 2 minutes. Season with chili powder, cumin, salt, and pepper to taste.
Step 4
Warm tortillas: While the filling cooks, warm your tortillas in a dry skillet or microwave for 30 seconds to 1 minute, until soft and pliable.
Step 5
Assemble and serve: Divide the filling between the warmed tortillas. Add your favorite fajita toppings of choice, such as salsa, guacamole, sour cream, shredded cheese, chopped lettuce, diced tomatoes, and enjoy!
